Ingredients
- 1 cup baby carrots, halved (or one or two regular carrots, sliced)
- 1 chopped onion
- 2 garlic cloves, minced
- 7 oz. turkey kielbasa, halved lengthwise and cut into 1/2 inch pieces
- 4 cups chicken broth
- 1/2 tsp dried Italian seasoning
- 1/2 tsp black pepper
- 2 (15.8 oz) cans Great Northern Beans, drained and rinsed
- a couple of handfuls of fresh baby spinach leaves
Directions
- Heat large saucepan coated with cooking spray over med-high heat. Add carrots, onion, garlic, and kielbasa, saute 3 minutes, stirring occationally. Reduce heat to medium, cook 5 minutes.
- Add the broth, Italian seasoning, pepper, and beans. Bring to a boil, reduce heat and simmer 5 - 10 minutes (or as long as you like if everyone’s not ready for dinner yet!)
- Remove soup from heat. Add spinach, stirring until spinach wilts.
Serve with a salad for a quick and easy dinner or lunch.
