4 c frozen spinach (2 -10oz pkgs.)
3 c sliced zucchini
3 c nonfat cottage cheese
2 c sliced mushrooms
2 c finely grated carrots
1 c chopped onion
2 eggs
1/4 c grated Parmesan
3 1/2 c tomato sauce
9 cooked lasagna noodles
4 1/2 oz. mozzarella cheese
Preheat oven to 350, spray 9 x 13 pan with nonstick spray.
In large bowl, combine all but last 3 ingredients.
In bottom of pan, spread 1/2 cup tomato sauce. Arrange 3 lasagna noodles over sauce.
Spread half of vegetable mixture and top with 1 cup tomato sauce.
Repeat ending with noodles then the remaining sauce.
Cover with foil and bake 45 minutes. Uncover and top with mozzarella cheese. Bake uncovered for 15 minutes more until cheese is melted.

P.S. I add salt, basil, arregeno, onion powder, garlic powder and a pinch of red pepper flakes to the tomato sauce. You could also substitute spaghetti sauce for the tamato sauce. Just to liven it up a bit!
