This is kind of my invention, and I don’t measure much. I sometimes make it in a 8 x 8 pan, sometimes I make more noodles and use a 9 x 11 pan. Use your own judgement of the amounts.

Ingredients

  • 1/2 pound spaghetti
  • 2 cups mozzarella cheese
  • 1/4 -1/2 teaspoon red pepper flakes
  • 1 - 10oz package frozen spinach, thawed
  • 1 large egg white
  • 1/2 - 1 jar spaghetti sauce (I use Paul Newman’s Sockaroni)
  • 1 - 2 tsp Italian seasoning

Directions

  1. Cook spaghetti until al dente and place it in a casserole dish. Sprinkle Italian seasoning generously over spaghetti
  2. Mix 1 cup cheese, red pepper flakes, spinach, and egg white. Spread over spaghetti.
  3. Spread spaghetti sauce over spinach mixture.
  4. Top with remaining cheese.
  5. Bake at 350 for 30 mins.
