This is kind of my invention, and I don’t measure much. I sometimes make it in a 8 x 8 pan, sometimes I make more noodles and use a 9 x 11 pan. Use your own judgement of the amounts.
Ingredients
- 1/2 pound spaghetti
- 2 cups mozzarella cheese
- 1/4 -1/2 teaspoon red pepper flakes
- 1 - 10oz package frozen spinach, thawed
- 1 large egg white
- 1/2 - 1 jar spaghetti sauce (I use Paul Newman’s Sockaroni)
- 1 - 2 tsp Italian seasoning
Directions
- Cook spaghetti until al dente and place it in a casserole dish. Sprinkle Italian seasoning generously over spaghetti
- Mix 1 cup cheese, red pepper flakes, spinach, and egg white. Spread over spaghetti.
- Spread spaghetti sauce over spinach mixture.
- Top with remaining cheese.
- Bake at 350 for 30 mins.
