Ingredients

  • Extra vigin olive oil
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup fresh minced basil or 1 tablespoon dried
  • 2 medium summer squash, thinly sliced
  • 1 large ripe tomato, thinly sliced
  • 2 medium zucchini, thinly sliced

Directions

  1. Heat oven to 450. Cut 2 pieces of parchment paper to fit a small baking dish or pie plate. Place one piece inside the dish and grease lightly with olive oil.
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, ans basil.
  3. Lay the summer squash on top of the paper in the baking dish, and sprinkle evenly with 1/3 breadcrumb mixture. Lay tomatoes in a single layer on top and sprinkle with 1/3 breadcrumb mixture. Finnish with a layer of zucchini and the remaining breadcrumb mixture.
  4. Grease the reserved parchment paper with olive oil and lay it, oiled side down, on top.
  5. Bake until vegetables are just cooked and the cheese has melted,about 15 minutes. Peel back the parchemnt carefully and serve immediately.
