Ingredients
- Extra vigin olive oil
- 1/2 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup fresh minced basil or 1 tablespoon dried
- 2 medium summer squash, thinly sliced
- 1 large ripe tomato, thinly sliced
- 2 medium zucchini, thinly sliced
Directions
- Heat oven to 450. Cut 2 pieces of parchment paper to fit a small baking dish or pie plate. Place one piece inside the dish and grease lightly with olive oil.
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, ans basil.
- Lay the summer squash on top of the paper in the baking dish, and sprinkle evenly with 1/3 breadcrumb mixture. Lay tomatoes in a single layer on top and sprinkle with 1/3 breadcrumb mixture. Finnish with a layer of zucchini and the remaining breadcrumb mixture.
- Grease the reserved parchment paper with olive oil and lay it, oiled side down, on top.
- Bake until vegetables are just cooked and the cheese has melted,about 15 minutes. Peel back the parchemnt carefully and serve immediately.
