Beef Sates

Ingredients

  • 3 cloves garlic, minced
  • 1 to 3 jalapeno peppers, seeded and chopped
  • 1/4 cup fresh cilantro
  • 3 tbsp brown sugar
  • 2 tsp ground coriander
  • 1/3 cup soy sauce
  • 1/4 cup lime juice
  • 4 tbsp vegetable oil
  • 1 1/2 lbs flank steak

Also have wooden skewers on hand

Directions

  1. Prepare the marinade: Combine the garlic, peppers, cilantro, and brown sugar in a mortar or food processor and process to a coarse paste. Work in coriander, soy sauce, lime juice, and 2 tbsp oil.
  2. Score the flank steak in a crosshatch pattern with a knife, then slice crosswise into long thin strips and thread the strips onto skewers. Arrange the skewers in a shallow dish. Pour the marinade over the beef and let marinate for 30 minutes, turning to ensure even seasoning.
  3. Preheat grill to high. When ready to cook, brush and oil the grill grate. Arrange sates on the grill so the meat is over the fire and the exposed skewers are away from the heat. Grill beef, basting with remaining oil, unitl cooked, 1 to 2 minutes per side.

Eat them right away because they cool down fast!
