Ingredients
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla
- 2 cups chopped peaches (canned or fresh)
- powdered sugar
Directions
- Preheat oven to 325 degrees
- Grease a 10-inch bundt pan generously and sprinkle with powdered sugar, shaking out excess
- Combine flour, baking powder, and salt in a bowl.
- Cream butter in bowl of electric mixer, add sugar and beat until light and fluffy. Add eggs one at a time beating well after each addition. Add vanilla and beat well.
- Add flour mixture constantly until blended. Beat only until flour is incorporated. It is important not to overmix at this point. Fold peaches into batter.
- Spoon into prepared bundt pan. Bake for 60 to 70 minutes or until golden brown and a wooden pick inserted near the center comes out clean.
- Cool in pan for 10 minutes. Invert onto a wire rack to cool completely.
- Dust with powdered sugar and serve with vanilla ice cream.

Oooh, I might have to try if I get time. I have been craving peaches for weeks now, canned peaches, fresh peaches, peach danish, and oh yes, peach cobbler. I’m sure I have been driving Tim crazy, he surprises me with peach treats though!
