Ingredients

  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 2 cups chopped peaches (canned or fresh)
  • powdered sugar

Directions

  1. Preheat oven to 325 degrees
  2. Grease a 10-inch bundt pan generously and sprinkle with powdered sugar, shaking out excess
  3. Combine flour, baking powder, and salt in a bowl.
  4. Cream butter in bowl of electric mixer, add sugar and beat until light and fluffy. Add eggs one at a time beating well after each addition. Add vanilla and beat well.
  5. Add flour mixture constantly until blended. Beat only until flour is incorporated. It is important not to overmix at this point. Fold peaches into batter.
  6. Spoon into prepared bundt pan. Bake for 60 to 70 minutes or until golden brown and a wooden pick inserted near the center comes out clean.
  7. Cool in pan for 10 minutes. Invert onto a wire rack to cool completely.
  8. Dust with powdered sugar and serve with vanilla ice cream.
