I’m not much of a morning person, but sometimes waffles make a great dinner!

  • 1 pkg. dry yeast
  • 2 c. lukewarm milk
  • 4 eggs, separated
  • 1 tsp. vanilla (1/2 tsp. almond extract is nice too)
  • 2 1/2 c. sifted flour
  • 1/4 tsp. salt
  • 2 tbsp. sugar
  • 1/2 c. melted butter

Dissolve yeast in milk; add beaten egg yolks, vanilla and salt. Add flour and sugar and mix. Add butter, set aside for several minutes. Whisk egg whites until they form almost stiff peaks and carefully fold into batter. Cover and let set on counter 30 minutes. Bake in waffle iron. Top with powdered sugar, whipped cream, syrup, fruit or Gruyere cheese.
